Crispy Pork Chops

This recipe has become a family favorite around here! In fact it’s on the menu for tonight! They are easy, quick and delicious. Serve with mashed potatoes or potato wedges! Thank you Ree Drummond (Pioneer Woman) for your delightful recipe. I love you!

Ingredients:

  • 1 teaspoon seasoned salt, plus more for seasoning
  • 1 teaspoon ground black pepper, plus more for seasoning
  • 8 pork breakfast chops
  • 1 cup all-purpose flour
  • Cayenne pepper
  • 1/2 cup vegetable oil
  • 1-2 tablespoons butter

How To:

  • Salt and pepper both sides of the pork chops.
  • Combine the flour and some cayenne, salt and black pepper. Dredge each side of the pork chops in the flour mixture, and then set aside on a plate.
  • Heat the vegetable oil over medium to medium-high heat. Add the butter. When the butter is melted and the butter/oil mixture is hot, cook 3 pork chops at a time, 2 to 3 minutes on the first side. Flip and cook until the chops are golden brown on the other side, 1 to 2 minutes (make sure no pink juices remain). Remove to a plate and repeat with the remaining pork chops.

 

 

 

 

 

Grilled Fish Tacos

A lighter and healthier alternative to the run of the mill taco! You’ll be surprised at how your kids gobble these up!

Tacos:

  • 2 pound white flaky fish such as cod, talapia or mahi mahi or orata
  • 1/2 cup vegetable oil
  • 2 limes, juiced
  • 2 tablespoons ancho chili powder
  • 2 jalapeno, coarsely chopped
  • 1/2 cup chopped fresh cilantro leaves
  • 16 flour tortillas

Garnish:

  • Shredded white cabbage
  • Guacamole
  • Hot sauce
  • Sour cream
  • Thinly sliced red onion
  • Thinly sliced green onion
  • Chopped cilantro leaves

Directions

Preheat grill to medium-high heat. Place fish in a medium size dish. Whisk together the oil, lime juice, ancho, jalapeno, and cilantro and pour over the fish. Let marinate for 15 to 20 minutes.

Remove the fish from the marinade place onto a hot grill or pan with a little oil. Grill the fish for 4 minutes on the first side and then flip for 30 seconds and remove. Let rest for 5 minutes then flake the fish with a fork.

Place the tortillas on the grill and grill for 20 seconds. Divide the fish among the tortillas and garnish with any or all of the garnishes. Makes 6-8 servings
